The Sauce: 1 small onion. 1 tsp curry powder. 1 tsp chilli powder. 4cm of fresh ginger. 1 garlic clove. ½ a scotch bonnet chilli, deseeded (optional) 1 tbsp thyme leaves. 1 flat tbsp of your jollof dry spice mix (half of the above)
