Thanos is not the sort of character who will kill people if they give him what he wants. Loki gives up the Tesseract, and he lets loki go. Gamora gives up the Soul Stone, and he has Nebula reassembled. There is no reason to assume that if the Collector gave up the Reality Stone, that he would not just let the Colelctor go.
