Like many French wines, calvados is governed by appellation contrôlée regulations. The three appellations for calvados are: The AOC calvados area includes all of the Calvados, Manche, and Orne departments and parts of Eure, Mayenne, Sarthe, and Eure-et-Loir. AOC calvados makes up over 70% of the total production.
Around 4,000 cider apple producers own an identified orchard within a controlled Calvados area. 350 producers, distillers, traders and cooperatives hold a stock of at least one Calvados appellation. Their products are today exported in more than 90 countries across the world.

Aug 22, 2024 · Calvados is a brandy (eau-de-vie) distilled from cider made from apples and pears grown in the orchards of north-western France. In theory, this traditional apple brandy can be produced in more than 1550 parishes dotted all over Normandy, Brittany and inland into the Pays de la Loire.
Calvados brandy comes in three different controlled appellations of origin: Calvados Pays d’Auge, Calvados and Calvados Domfrontais, the geographical production areas of which have been strictly delimited by the INAO (French National Institute of Designations of Origin).
