  1. Jun 1, 2023 · I made a classic miso soup to give lots of different dashi substitutes a try. Dashi is a staple ingredient in Japanese cuisine that brings a sweet-savory, umami kick to any dish. You can buy dashi in liquid or granule form, but if you can’t find it in your local shop, don’t fret. There are other options you can use that’ll give your dish ...

    • Shiro-Dashi. The first option on the list is a soup base (stock/broth) that is made with different ingredients: shiro-dashi. Shiro dashi is made up of white soy sauce, mirin, and sugar mixed with either bonito infused or kombu infused dashi depending on the type or brand you purchase.
    • Mentsuyu. Mentsuyu is a similar option to shiro-dashi as it is also a soup base that is made with different ingredients. Specifically, it is made with the same ingredients: mirin, sugar, either bonito infused or kombu infused dashi, and, the one place where it is different, brown soy sauce.
    • Kombu-Tsuyu (Kombu-Dashi) Kombu-Tsuyu, also known as Kombu-Dashi, is very similar to mentsuyu and shiro-dashi as it contains a plethora of ingredients to form a broth base.
    • Hondashi. Hondashi is a great option for those who do not want a soup or broth base as hondashi is a dashi concentrate. Hondashi comes in small tiny granules that are made with dashi’s core ingredients: bonito flakes and some form of kelp or seaweed.
  2. Jul 23, 2023 · This will help to give that more distinctive umami profile. When looking for a dashi substitute for miso soup or miso paste in your Japanese dish, homemade dashi might be the easiest option. Grab some fish sauce or dried anchovy to make the Japanese dashi stock. You can also use chicken broth with a dashi packet to make a dashi broth for a nice ...

    • Chicken Broth. Chicken broth is arguably one of the quickest and easiest substitutes for when you do not have dashi. To create your substitute, remove all of the meat from the bones, then add the bones to water and boil for 10 to 20 minutes.
    • Monosodium Glutamate. Monosodium Glutamate, which is better known as MSG, is a highly rated substitute and is good for enhancing the unami of the dish.
    • Shiitake mushrooms. Shiitake mushrooms are arguably a staple food in Japanese cuisine. They also allow you to almost replicate the savoury flavour of dashi just by isolating the one component of it.
    • White fish. Again, dashi can be made by just replicating one of its core components. Katsubushi, one of the main ingredients, is actually made up of dried white fish so using white fish as a dashi substitute can be a very good replica.
    • Beef, Chicken, Fish, or Vegetable Stock. In some recipes, you may want to consider substituting dashi with vegetable stock to ensure any vegetarian or vegan guests can enjoy your recipe!
    • Dashi Powder or Bouillon Powder. These are great alternatives to dashi because you can keep them on the shelf with no need to refrigerate! They are also lightweight making them a great choice if you are traveling or camping and need your dashi fix!
    • Instant Soup Packet. Instant noodle soups are known in the Western world as a cheap dinner for budgeters. But in Japan, these noodle packs are a staple!!
    • Dried Mushrooms. By rehydrating dried mushrooms (especially shiitakes but any type will do!) with boiling water, you can easily make a delicious, healthy stock that will rival any meat stock or seafood stock.
  3. Oct 11, 2023 · Dried Shiitake Mushrooms. Dried shiitake mushrooms make a great vegan or vegetarian substitute for dashi powder. They won’t give you the same briny notes as dashi powder, but shiitake mushrooms are jam-packed with earthy, umami goodness that will add depth and complexity to your dishes. You can use them in two ways.

It's made from white soy sauce, mirin, and sugar mixed with kombu-infused dashi or bonito-unfused, depending on the type you buy. Since dashi is already part of shirodashi, this is a great substitute.
