It is 100% possible to live in Quincy without a car as long as you stay within your walking range of the train. Grocery shopping is easy to do on foot near the North Quincy or Wollaston stops. Still possible though less pleasant at Quincy Center (more stroads).
I lived near Quincy for a few years, would go into the city regularly, and I have a few opinions on it as an out-of-town type person: It's the only town in or around the South Shore area that feels "Boston urban" - the rest just feel like normal suburbs, like neighboring Braintree and Randolph.
