Like the Elite series, the Ultra series includes SSS and HSS Strats and a solidbody Telecaster, but the American Elite Telecaster Thinline exits stage left and is replaced by the American Ultra Jazzmaster. It’s a smart move given the current omnipresence of offset-body guitars.
American Ultra is every bit as fantastic, but is a more versatile instrument. It's great for any type of music (even for those types you normally play with humbuckers — i.e. modern metal and such) at the expense of sounding a bit less telecaster-like.
Both the American Professional II and American Ultra Telecaster are high end electric guitars that cater to a similar style and price range. The Ultra is more expensive, but it provides a lot of value for what you pay, upgrading the pickups, tuners, body tonewood, and vintage-style bridge.
The two you’ve suggested are ‘modern’ (IMO) although the Am. Pro II tips a nod to Vintage much more than the Ultra. For a properly Vintage Tele, look to the recent ‘American Vintage II’ - which seeks to replicate the original spec Telecaster of the ‘50’s’.
