Just eat like a normal person. Morning, afternoon, evening/night, and minimise junk food (crackers, biscuits, etc) intake if you don't want to gain weight as quickly. I've never dropped below perfect since the start of chapter 2. I'm always somewhere between perfect and +3 over, and this is how I make Arthur eat. EDIT: Clarification.
They do, but you're supposed to be able to get them back. The War Horse was available to re-purchase (still for free) for me, though others have reported they weren't able to to get either DLC horse back. It seems like they're bugged in certain cases. then they need to fix that with all the rest of the issues too.
