  2. Mar 26, 2020 · Making this cake is just as simple as any box mix, just with a couple of other ingredients. To make it all you need to do is: whisk the dry ingredients together. add the wet ingredients. mix on low until combined. This recipe works great for two 8″ cake pans or three 6″ pans.

    • Add More Eggs. To get an extra rich and moist cake, stir in two extra egg yolks along with the eggs the recipe calls for (save the egg whites to make these delicious meringues).
    • Walk Away from Water. Water tastes like, well, water! Swap it out for another liquid, preferably something with flavor and fat. Substitute whole milk or your favorite non-dairy milk (almond and coconut milk work especially well).
    • More Fat, More Flavor. Most box cake recipes call for vegetable or canola oil. The only trouble is, these oils have almost no flavor. Replace the oil with an equal amount of melted butter (and a pinch of salt if using unsalted butter), to boost richness.
    • Amp Up the Chocolate. Boost the flavor of a boxed chocolate cake mix by adding hot water instead of tap. The hot water helps to "bloom" the cocoa (just like adding hot water to coffee grounds).

    • Add an Extra Egg. If you only use one tip from this story, this one should be it. Most cake mixes call for two to three eggs. Just one more egg will add extra moisture, fat, and a little protein, which means the cake will be softer and less likely to overbake and dry out in the oven.
    • Add Milk, Coffee, or Soda. Boxed cakes often call for water, but swapping it out for equal amounts of milk, coffee, or even soda will give you a moister, more tender, and flavorful cake.
    • Use Butter Instead of Oil. My favorite swap and also the easiest: add melted butter instead of canola or vegetable oil, which most boxed cake mixes call for.
    • Add Instant Pudding. Whisk one small (3.4-ounce) package of instant pudding into the dry cake mix. You’ll want a similar pudding flavor. For example, use chocolate pudding for a chocolate cake mix.
