- Fish Sauce (Nam Pla) A vital element of Thai cuisine, fish sauce is made by fermenting fish with salt. It imparts a salty and savoury flavour to dishes and is often used as a seasoning or dipping sauce.
- Coconut Milk (Kati) Extracted from grated coconut flesh, coconut milk is creamy and rich. It’s a key ingredient in many Thai curries, soups, and desserts, adding a delightful tropical sweetness.
- Lemongrass (Takhrai) Known for its fragrant, lemony aroma and flavour, lemongrass is sliced or pounded and used to infuse broths, soups, and curries with a bright, citrusy note.
- Galangal (Kha) Galangal is a rhizome similar to ginger but with a more peppery and earthy taste. It’s a crucial component in many Thai curries and soups, lending depth and complexity.
Comparing to central/southern California, where you can find a lot of really decent Thai food, I would say the "Thai spicy" on the menu is just a fictional sales tactic. In most cases, the Thai spicy option is far more spicy than the same dish would be typically in Thailand.
- Turmeric. This orange-colored root vegetable looks a lot like ginger. Although it’s sometimes used raw, it’s generally dried to a powder form and used for coloring in curries.
- Green or Red Chili. Yellow, red or green chilis are used with abandon to spice Thai food. Whether in whole form or as Thai chili powder, chilis or prik will find their way into every savory dish you eat.
- Lemon Grass. A type of grass lauded for its antifungal and antibacterial properties, lemongrass or takrai is used as a Thai seasoning ingredient. Sometimes it’s cut, sometimes just bruised and sometimes it’s ground.
- Holy Basil and Sweet Basil. Both sweet basil and holy basil spice Thai cuisine. Sweet basil or horapa is often used as a vegetable too. While the kaprao or holy basil spice Thai is used in curries since it only releases its flavor when heated.
