- Picanha. Picanha is the house specialty of Fogo de Chão and perhaps the most iconic cut of churrasco-style dining. It consists of thick chunks of top sirloin butchered in a way that leaves a large fat cap attached.
- Ribeye. Fogo de Chão's menu has a list of meats that come with the churrasco all-you-can-eat experience. You'd think it would be easy to snag any of the meats from a passing gaucho, but in our experience, the restaurant tries to hide some of the choicer cuts.
