Auckland has alot of humidity - but Taupo has more alpine air... being near the central plateau mountains, and with the lake. I think you'll find Taupo has 'party' if you want it, but would be easily avoided if you want more peaceful nights.
Taupo and Turangi are beautiful places, and are definitely worth moving there if it's not too much of a sacrifice leaving Auckland. Tends to be colder than Auckland in the winter, and also tends to be a lot clearer and dryer than the city as well.
