Chef Simon has created a menu of modern tapas, including 1862 Corn Ribs with a coriander and Galmesano pesto and Galician Octopus with a Rioja chili sauce, while also honoring traditional tapas bars with dishes such as Ham Croquettes, Padron Peppers, and Patatas Bravas.
