The day/night cycle can be modified in Creative by setting the time of day and lighting conditions. Using the Skydome or Day Sequence Device, you can create a custom Day/Night sequence. You can also customize things like the intensity of the stars and the density of the clouds.

Easy! Just take the SkyDome device and design the skies you want to cycle in your map (Morning-Afternoon-Night, or whatever). Then, take a trigger and a chronometer. Now, set the first SkyDome to be activated at the game start by whichever device (Trigger, button, etc).
