Sink or swim works on the basis that liquids have different densities. Liquids/Solids/Gases with a low density float above those of higher density. Density is how much mass a material has, for a given volume. For example, if we consider the sugar content of two cans of coke (Coke and Diet Coke).
For a material to sink it displaces its volume in water, but less mass. In the case of the soda cans, diet soda has a sugar substitute which can consist of aspartame, saccharin, sucralose, cyclamates (outside the US), acesulfame potassium ("Ace K"), and stevia.
