Viggo actually wrote a lot of his own dialogue in that film, including the famous introductory scene; and Walken spent most of that shoot eating raw garlic for reasons unknown to his costars. Viggo had mentioned this in an interview about 10 years ago, but I assumed he was doing one of his traditional press tour lies and discounted it until I found a Virginia Madsen interview that confirmed it.
