    Ground Beef: Cook this first and drain the grease. Since we drain the fat, I don’t find it matters much what fat percentage you use.
    Cheese:The key to this dip is using both Velveeta and cream cheese!
    The Heat:To add spice, I use a combination of salsa (your favorite brand), canned green chilies (not hot but packed with flavor), de-seeded jalapenos, and hot sauce (again, any kind you like).
    Brown ground beef and onionin a skillet. Drain off the fat and place it in a slow cooker.
    Add cubes of Velveeta along with all the other ingredients and stir. Place the lid on the slow cooker.
    Cook on LOW for 3 hours, stirring halfway through the cooking time.
    When done, stir and serve with your favorite tortilla chips.

    I think the best way to serve queso dip with meat is with crispy tortilla chips. But let’s not stop there! Pour it on top of tacos, nachos, or taco salad. It’s terrific ladled on french fries or baked potatoes. It’s also crazy good on Hot Dogs!
