In 1934 The Three Swans was acquired by John Fothergill, author of the best-selling book An Innkeeper’s Diary, chronicling his previous experiences in the hotel trade in the south. During 18 years at The Three Swans he published a cookery book and another about his life.
Relayed in the book are the anecdotes of John Fothergill, pioneer amateur Innkeeper as he described himself, who was landlord of The Spread Eagle during the 1920s and early 1930s. He transformed The Spread Eagle into the first respectable hotel – upsetting dozens of people on the way!
