Kingdom is definitely one of the best anime in terms of story, and in season 1 after the first arc even season 1 of anime becomes really interesting. After watching season 3 kingdom can actually be in my top 10 anime ever because its made really well.
you should watch all anime, even season 1. you may think the art it's bad but it's getting a lot better later in the episodes. it is fluent and very immersible. you will enjoy it.
I would recommend reading the manga for the first 173 chapters and then picking up S2 if you want to watch the anime. It's probably the second best war drama in the medium only beaten by LOTGH in my opinion.

What I didn't like about Kingdom is the drawing of the first season, but regardless of the drawing of the first season, the anime is great. I recommend that you watch it, as it is fun and even the manga is better than the anime itself.
