You can regulate their size by placing a block 8 blocks high up from the sapling if I remember right. 8 or 10 or whatever. There's a minimum on it. For oak trees, I have the ceiling 8 blocks above the ground so that there are 7 blocks between the ground and the ceiling.
1×1 spruces require a 5×5 column of unobstructed space at least 7 blocks above the sapling to grow (8 blocks including the sapling itself). No horizontal clearance is needed at the base of the tree and 1 level above (a sapling planted in a hole 2 blocks deep can still grow).
Many types of plant require Farmland to grow on. Farmland is made by working on grass or dirt blocks with a hoe. Farmland looks similar to dirt, but the block isn’t quite as tall. Farmland that remains unplanted for too long, or that is jumped on (by players or mobs) will revert to dirt.
It should be noted that leaving 9 blocks of space for trees to grow does not guarantee that all trees grow to this height. Trees grow with trunks 4-7 blocks in height, but not higher. Some may also grow branches despite the height limitation.
