As players can probably tell from the name, nitwits do nothing aside from sleeping and roaming around the village. They cannot take on a professioneven if the player forces them by placing a job site block in the nitwits' vicinity.
Like other villagers, a nitwit's appearance depends on the biome it spawns in. However, the top part of their robe is always green. Apart from their clothes, there isn't a noticeable difference between them and other villagers. Since they cannot take on any profession, their appearance does not change.
Even though it may feel like they do not do anything, they can still breed like regular villagers. Players can easily create a villager breeder where they use only nitwits for breeding. If you want to kill them without the golems going agro on you, use lava or drop them down a deep hole, or drop them down a hole with lava at the bottom, or drop them in a hole and put gravel in it... you get the idea.

They would not cause any disturbance to players at all. Nitwit villagers also do not gather around the village bell when players hit it.

if you are building a high-efficiency trading hall and need the utmost productivity out of your villagers, then you can just off them. but if you are simply building a living village you can just let them be. hang out with them. build a party house. put all the green coats in there.
