We make our version of the dish with store-bought massaman curry paste, but doctor it up with star anise, cinnamon, and palm sugar. Belgian wheat beer might seem like an odd addition to a Thai/Middle Eastern dish, but its bitter, citrusy notes work quite well with the other flavors.
