The kids will automatically go to school if there is room when they turn 10. If you don't have a school, they become adults and will never go to school. The age they graduate varies. 16 is the youngest but could be age 22 or so - apparently it takes longer if they live farther from school.
The only problem the school poses is when to build one. I found out that building one too early, when your current workforce is aging, is not smart. The setback is too steep. So you'll need to build one when a new generation is entering the workforce and new babies are born.
At the age of 10, children join a school if an opening is available (and become full-time students until they graduate), or become an uneducated adult if no school slots are available. That decision is taken exactly once per child, and they cannot switch streams (e. g. Adults going back to school, or students working part-time).
You're right, you shouldn't finish your school until you have enough laborers. In the beginning you simply can't miss the workforce. It does really pay off if you time it right.
Apr 26, 2021 · When aging up (6 or 10 in vanilla), kids will either become students if you have a school with a teacher assigned, or will become uneducated workers. Once a kid has turned into a worker, he'll never go to school, even if you open a school when he's still only 6 (or 10).

A school house requires a teacher to be assigned as a worker before children can be educated. A school can only educate 20 students at once. You'll need more than one school house and teacher to educate larger populations.
