Use water to harvest and set up a farm with steps every seven blocks. Then you can use a piston to start/stop the flow of water. It works beautifully; you can stand in one place, pull a lever, and all the wheat and seeds come to you. Unfortunately, you still need to run around and replant, but it's much better than having to harvest and replant.
