Many Happy Returns or Terra Incognita. The latter is, in my opinion, the best directed episode in the series. The former is just the moment the entire John backstory clicks into place and it's amazing.
It lightly blends in sci-fi/magical realism which I love. Every season tells a different story, sets a different mood and yet they’re all fantastic. S2 & s5 are my favorites, and a lot of people seem to be discovering the show from having only watched this last season (5)- but I’d start with 1!
