Chicken is marinated in mustard and lemon, then slowly grilled for a smoky flavor in a base of caramelized onions, garlic and chilis.

    • Fonio. Fonio is a food that Thiam is particularly passionate about, as he sells a variety of fonio products through his company Yolélé, including bagged pilaf mixes and chips.
    • Caldou. Thiam has childhood memories of his mother preparing caldou; it originated in Southern Senegal where he grew up. It's a brothy fish dish that can be prepared with whole fish, fish filets, or shellfish.

    • Yassa. Yassa is a South Senegalese favorite that is made with chicken, lamb, or fish. The first step for making the spicy, smoky dish is to caramelize a bunch of thinly sliced onions in oil.
    • Thieboudienne. This traditional Senegalese dish is made from rice, fish and tomato sauce. Other ingredients often include onions, cabbage, carrots, cassava and peanut oil.
    • Red Red. A thick stew made of mashed black-eyed peas (although any other beans will do) It’s cooked in red palm oil and pepper. Most recipes will include a little tomato paste, chilli, fresh garlic, ginger and spices to add flavour.
    • Chicken or Fish Yassa. Yassa is a crowd favourite. Chicken or fish pieces are marinated in dijon mustard and lemon juice, then braised with caramelized onions and slow-cooked until the meat is perfect.
    • Suya. Skewers of spiced cuts of meat such as beef, mutton or chicken are grilled over a charcoal fire or BBQ. Often served with chunks of raw onions, spicy sauce for dipping and extra seasoning, this dish is best enjoyed in a local eatery alongside a cold beer.
