Ghanaian cuisine is built around starchy staples like fufu, kokonte, banku, and emotuo. They’re always served with a light soup or stew along with a protein. Common proteins include goat, beef, chicken, pork, lamb, snails, and fish.

    • Banku. Banku is a solidified mixture of fermented corn dough and cassava dough that is combined and swirled in boiling water. It is a delicacy in Ghana’s southern, eastern, and western regions.
    • Yam Pottage. Yam, like many other Ghanaian staple foods, may be used to create a bunch of dishes including yam pottage. Yams are boiled and cooked with tomatoes, peppers, onions, oil and herbs.
    • Kelewele. Kelewele is a side dish that consists of fried plantains that have been seasoned with a variety of spices and served alongside a stew or even just on their own.
    • Fufu. Fufu is a renowned delicacy throughout Ghana and its neighbouring countries. In Francophone areas, it is known as foufou or foutou, whereas in English-speaking areas, such as Nigeria, it is known as fufu.
    • Koko with Koose/Bread (Corn Meal Porridge and Bean Cake/Bread) This food, though can be taken at any time of the day, is mostly eaten as breakfast. It is a common sight to see lots of buyers line up in a queue just to purchase this delicacy – queuing for food is very common in most African cities.
    • Hominy Corn Porridge. This widely popular breakfast is akin to European hominy grits. It is made from hominy corn, and that’s all you need to make this hearty breakfast.
    • Rice Water Porridge. Another plain but nutritious breakfast is the rice water porridge. Very popular in the Southern and Middle belts of Ghana, this simple but delightful breakfast only requires three ingredients – water, salt, and rice.
    • Banku with Soup and Seafood. Banku is a combination of fermented corn dough with cassava dough which is mixed and stirred in hot water till it becomes solid.
