Put the flour, beaten eggs and panko in three shallow dishes. Roll each rice ball in the flour, then egg and then panko, coating well. Carefully drop the rice balls in the fryer or saucepan and, working in batches, fry for 3–4 minutes until golden brown. Drain well on kitchen paper and serve immediately with Scotch Bonnet Sauce.

Tip the rice in a sieve, rinse under cold water, drain and set aside. Put the peppers, onion, garlic, ginger and chilli, if using, in a food processor and blitz until chopped. STEP 2. Heat the oil in an ovenproof casserole over a medium heat and fry the tomato purée for 2-3 mins, stirring often.

Dec 27, 2022 · Ingredients. The ingredients required for making jollof rice are pretty basic. You probably already have them in your kitchen. The main ingredient in jollof rice is, of course, rice. I used long-grain parboiled rice for this recipe, but you can also use basmati. I have a recipe for that here – (basmati Jollof with beef).

Stir in the spices and seasonings (Paprika, thyme, nutmeg, bay leaf, and salt), then add the rice and vegetable or meat stock and stir together.
