Reduce heat to low, cover and leave to cook for about 15 minutes. Finish dish – When the rice is cooked, add the cooked chicken peas and fresh chopped parsley. Stir well and serve.

I typically always have chicken breast on hand so that's what I used. You want them in like-size pieces for even cooking. Rice: Long grain white rice works best for this recipe, but if you substitute let me know!
