Ghana Jollof Recipe. Ingredients for a serving of 3-4 persons. 500 grams of rice (about 2½ – 3 cups) 6 large fresh tomatoes and 3 tablespoons of tomato puree. 2 medium-sized onions. 5-8 fl.oz of vegetable/groundnut/olive oil. 500 grams of chicken (you can use any other desired type of meat or fish)
How to prepare. Pour water into a large pot. Add the chicken, tomatoes, salt, and pepper. Cover the pot and bring it to a boil. Then, reduce the heat and let it simmer for 30 minutes. Stir in the ham, rice, onion, cabbage, green beans, cinnamon, and cayenne pepper. Bring the mixture to a boil again, then reduce the heat to low.
