Apr 10, 2023 · Place the basil leaves in a heat-safe strainer. Dip them in the boiling water for 3 seconds (you don’t want to overdo it and cause them to go limp.) Immediately dunk the leaves in the ice bath until cooled. This takes about a minute. Dry the leaves thoroughly then freeze or flash freeze as described above.

Add a drizzle of olive oil and pulse to lightly coat the leaves with oil; this will keep the basil from turning black in the freezer. Scoop the resulting mixture into ice cube trays and freeze.
