If not, does wiping it get rid of everything including custom profiles, email connection, ringtones, etc.? I do a quick backup with the desktop manager.

If the original number was replaced by a new number, due to spam etc, it's very unlikely you will be ale to get it back now. However if you mean you still have the original number and sim card it's possible.
