Jollof ( / dʒəˈlɒf / ), or jollof rice, is a rice dish from West Africa. The dish is typically made with long-grain rice, tomatoes, chilies, onions, spices, and sometimes other vegetables and/or meat in a single pot, although its ingredients and preparation methods vary across different regions. The dish's origins are traced to Senegal.
Oct 6, 2023 · Jollof Rice. In a deep pot, heat the vegetable oil over medium heat. Add diced onion and bay leaves to heated oil and fry for 2-3 minutes. Once onions are translucent, add pepper sauce, thyme, bouillon and tomato paste for color. Cook for 3-4 minutes until the raw smell of the pepper sauce disappears.
Put the rice in a bowl of water to soak while you make the sauce. Put all the ingredients for the sauce into a blender or food processor and blend with a little salt and pepper. Pour into a lidded saucepan and put the lid on. Bring to a medium simmer for 10 mins, until simmering, then season generously with black pepper and a pinch of salt.
