I have looked on the help pages & watched the videoes on youtube about how to record, but on the drop-down list from the elipsis/3 dots (...), the option to record isn't there.

I was able to contact them today (Dec 4, 2023) about Microsoft 365 Personal not installing correctly with regards to the email (Outlook) storage. They told me that they were aware of a bug in the software program and that they were working on it.

If, as Palcouk suspects, you want to use an address and dont own the domain, you can add it as a connected account. This will allow you to send from the address. Get a personalized email address in Office 365.
